The botanical minute

Cinnamon is the inner bark of the cinnamon tree, which can grow up to 15 metres high. Harvesting takes place under very specific conditions: In the morning, in spring, and most often on rainy days. Cinnamon is often used as a spice, in the form of brown sticks. When the bark dries, it curls up to form a small tube with a characteristic scent.
